Sourcing seafood on the Adriatic is not hard. Sourcing it consistently, at a price that survives a costing sheet, in a quantity that suits a 40-cover restaurant — that is hard. Most kitchens end up with one big wholesaler for volume and one small contact for the good stuff. That's a reasonable setup, as long as you're honest with both of them about what they are.
Questions worth asking before you commit
- What time was it landed, and what time does it leave your cold room?
- Can I have the boat name on the delivery note?
- What happens on the days the catch is bad — do you substitute or do you call me?
- Who ices it, and how many times is it re-iced before it reaches me?
- What is the minimum order that still gets me a morning delivery?

Why we find them interestingThe best fish I've cooked came off boats like these. Supply is unpredictable and you have to be willing to build the menu around what arrives. Worth it if your kitchen can be flexible.

Why we find them interestingThe oysters are genuinely world class and the growers are used to dealing with restaurants directly. Ask about harvest dates rather than delivery dates.
One last thing. If you're a smaller restaurant and you feel you're too small to get a good supplier's attention, group with two or three other kitchens nearby and order together. I've seen it work in three different towns. Suppliers care about the size of the van run, not the size of your dining room.
